By Laura October 29, 2015

Don't relegate your pumpkin insides to the bin...check out some of the best Halloween Pumpkin recipes on the web!

Most of these recipes call for pumpkin puree. You can easily make this by steaming or dry roasting pumpkin chunks in the oven for half an hour, then puree the pumpkin in a food processor or with a blender. Can't be bothered to carve? You can buy canned pumpkin puree online or in some supermarkets

1. Harissa-Spiced Pumpkin Gnocchi

Swap potato for pumpkin and enjoy this spicy, seasonal bowl of comfort

2. Thai Pumpkin Soup

Predictable? Maybe, but we're getting to the time of year where only a bowl of steaming soup will do. This 5 ingredient recipe is super easy and tastes just as good with butternut squash instead of pumpkin when Halloween is over.

3. Pumpkin and Coconut Loaf Cake

The perfect elevenses treat

4. Pumpkin and Ginger Tart

Put aside a little bit of time on a rainy afternoon to make this pumpkin tart with a twist - it'll be worth it!

5. Pumpkin Seeds

Full of protein and antioxidants, whether you throw them in a salad or eat them as a snack, just don't throw them away! Here's how to roast them

6. Pumpkin Spice Latte

Now you can enjoy your favourite coffee shop treat from the comfort of your own home!

After 3 years of excess at uni took a serious toll on my waistline and wellbeing, I found that a love for strength training, HIIT and spin classes were key to keeping me healthy and happy. I'm at the forefront of finding out and creating awesome stuff about health, fitness and happiness and when I'm not at work I love nothing more than pizza and prosecco in the sun with friends. What motivates me? Knowing that life is short...
